- 2 cups cooked chicken, shredded (preferably grilled or baked)
- 1 cup shredded cheddar cheese
- 1 cup diced tomatoes
- 1/2 cup chopped green onions
- 1/2 cup sour cream
- 1/4 cup milk
- 2 tablespoons olive oil
- 2 teaspoons spicy Cajun seasoning
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Optional: chopped jalapeños for extra spice
Instructions
- Cook the spaghetti according to package instructions until al dente. Drain and set aside.
- In a skillet, heat olive oil over medium heat and cook shredded chicken until heated through, seasoning with Cajun spices if desired.
- In a large mixing bowl, combine cooked pasta, shredded chicken, diced tomatoes, chopped green onions, sour cream, milk, Cajun seasoning, garlic powder, salt, and pepper. Mix well.
- Stir in half of the shredded cheddar cheese for a cheesier texture.
- Transfer the mixture into a greased baking dish, spreading evenly.
- Sprinkle remaining cheddar cheese on top.
- Bake in a preheated oven at 375°F (190°C) for 20-25 minutes until bubbly and golden. Broil for an additional 2-3 minutes for a crispy top, if desired.
