- 8 small taco shells
- 2 cups cooked chicken, shredded
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup diced tomatoes
- 1/4 cup chopped cilantro
- 1/4 cup chopped red onion
- 1/4 cup sour cream
- 1 tablespoon olive oil
- 1 teaspoon taco seasoning
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, combine cooked chicken with taco seasoning and olive oil.
- Fill each taco shell with the seasoned chicken and top with cheese.
- Arrange tacos on a baking sheet and bake for 10-12 minutes until shells are crispy and cheese is melted.
- Remove from oven, add diced tomatoes, onion, cilantro, and a dollop of sour cream. Serve warm.
