- 2 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- ¾ cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup brown sugar
- 2 tablespoons ground cinnamon
- Optional: confectioners’ sugar for dusting
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Whisk together the flour, baking powder, and salt in a bowl.
- In a large mixing bowl, beat softened butter and granulated sugar until creamy. Add eggs one at a time, then vanilla extract, mixing well.
- Gradually add dry ingredients to the wet mixture until just combined.
- In a small bowl, mix brown sugar and cinnamon to create the cinnamon-sugar filling.
- Divide dough in half. Roll each into a ¼ inch thick rectangle on a floured surface.
- Spread half of the cinnamon-sugar mixture over each rectangle.
- Roll each rectangle into a tight log and slice into 1-inch thick cookies.
- Place slices on prepared baking sheet and bake for 10-12 minutes until golden around edges.
- Cool slightly and dust with confectioners’ sugar if desired.
Notes
- Chill the dough for at least 30 minutes to make slicing easier.
- Use a sharp knife for even slices.
- Add a pinch of nutmeg or cardamom to enhance flavor.
