- 1 pound Italian sausage
- 1 package (9 ounces) refrigerated tortellini
- 1 medium onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 garlic cloves, minced
- 4 cups chicken broth
- 1 can (14.5 ounces) diced tomatoes
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, cook Italian sausage over medium heat until browned. Remove excess fat.
- Add chopped onion, carrots, and celery; cook until vegetables are tender, about 5 minutes.
- Stir in garlic and cook for 1 minute.
- Pour in chicken broth and diced tomatoes; add basil, oregano, salt, and pepper. Bring to a boil.
- Reduce heat and simmer for 10 minutes.
- Add tortellini and cook until al dente, about 3-4 minutes.
- Garnish with fresh parsley before serving.

- You can substitute sausage with turkey sausage for a leaner option.
- Add spinach or kale for extra greens.
- For a spicy kick, add red pepper flakes during cooking.
