- 4 boneless, skinless chicken breasts
- 4 large potatoes, diced
- 4 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1/2 cup chicken broth
- 1/4 cup heavy cream

- 1 teaspoon Italian seasoning
- Salt and black pepper to taste

Instructions
- Place diced potatoes in the bottom of the crockpot and season with salt, pepper, and Italian seasoning.
- Rub chicken breasts with olive oil, garlic, salt, and pepper, then layer over the potatoes.
- Pour chicken broth and heavy cream over the chicken and potatoes.
- Sprinkle grated Parmesan cheese evenly on top.
- Cover and cook on low for 6-8 hours or until chicken is cooked through and potatoes are tender.
- Garnish with fresh parsley before serving.

- Adjust seasoning according to taste.
- For a crispier finish, broil the chicken for 2-3 minutes after cooking.
