- 12 oz of pasta (penne or fusilli work well) – see pasta options
- 2 boneless, skinless chicken breasts, sliced into strips – chicken ingredients
- 1 cup grated Parmesan cheese
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream or half-and-half
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Begin by boiling a large pot of salted water. Cook the pasta according to package instructions until al dente. Drain and set aside.
- Season the chicken strips with salt, pepper, and Italian seasoning. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken and cook until golden brown and cooked through, about 5-7 minutes. Remove from skillet and set aside.
- In the same skillet, add the remaining olive oil and sauté the minced garlic until fragrant, about 1 minute. Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese until melted and smooth. Adjust the seasoning with salt and pepper.
- Add the cooked pasta and chicken back into the skillet with the Parmesan sauce. Toss until evenly coated. Warm through for a minute or two. Garnish with freshly chopped parsley and an extra sprinkle of Parmesan if desired. Serve hot and enjoy your effortless Parmesan chicken pasta.
