Ingredients

- 2 tablespoons olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 poblano peppers, sliced
- 2 chicken breasts, cooked and shredded
- 1 can black beans, drained and rinsed
- 4 cups chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh cilantro and lime for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Sauté chopped onion and garlic until translucent.
- Add sliced poblanos and cook until tender.
- Pour in chicken broth and bring to a simmer.
- Add shredded chicken and black beans, then cook for 10 minutes.
- Cook for an additional 5 minutes until heated through.
- Serve hot garnished with cilantro and lime wedges.
Stir in heavy cream and season with salt and pepper.
