- 1 pound potato gnocchi
- 6 slices bacon, diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream

- Chopped chives or parsley for garnish
Instructions
- Cook the bacon in a large pot until crispy. Remove and set aside.
- In the bacon drippings, sauté onions and garlic until translucent.
- Add chicken broth and bring to a simmer.
- Stir in gnocchi and cook until tender, about 3-4 minutes.
- Reduce heat, then stir in heavy cream, cheese, and butter until melted and smooth.
- Season with salt and pepper. Garnish with bacon pieces and herbs before serving.
Notes
- For a thicker soup, simmer until slightly reduced.
- You can substitute turkey bacon for a healthier option.
