Ingredients

  • 8 oz cheese tortellini
  • 1 lb sausage (Italian preferred)
  • 3 carrots, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 2 cups spinach or kale
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sausage and cook until browned. Remove and set aside.
  2. In the same pot, sauté onions and garlic until fragrant. Add carrots and cook until slightly tender.
