- 8 oz cheese tortellini
- 1 lb sausage (Italian preferred)
- 3 carrots, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 2 cups spinach or kale
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add sausage and cook until browned. Remove and set aside.
- In the same pot, sauté onions and garlic until fragrant. Add carrots and cook until slightly tender.
- Pour in broth, bring to a boil, then reduce heat and simmer for 10 minutes.
- Add cooked sausage back to the pot along with tortellini. Cook for about 5 minutes until tortellini are tender.
- Stir in greens and cook until wilted. Season with salt and pepper.
- Serve hot, garnished with fresh herbs if desired.
Notes
- You can substitute spicy sausage for a different flavor profile.
- For a vegetarian version, use plant-based sausage and vegetable broth.
