- 8 oz orzo pasta
- 1 lb large shrimp, peeled and deveined
- 1/2 cup crumbled feta cheese
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 lemon, zested and juiced
- 1/4 cup chopped fresh parsley
- Salt and freshly ground black pepper to taste
Instructions
- Cook orzo pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
- Add shrimp to the skillet and cook until pink and cooked through, about 3-4 minutes per side.
- Stir in lemon zest and juice, then add cooked orzo to the skillet. Mix well.
- Remove from heat and stir in feta cheese and chopped parsley. Season with salt and pepper to taste.
- Serve immediately garnished with extra parsley and lemon wedges if desired.
Notes
- For extra flavor, add red pepper flakes during cooking.
- Best served immediately for optimal freshness.
