- 1 cup granulated sugar
- ½ cup brown sugar
- ½ cup vegetable oil or melted unsalted butter
- 3 large eggs
- 1 teaspoon vanilla extract

Instructions
- Wash zucchinis thoroughly and grate them using a box grater or food processor. Squeeze out excess moisture with a kitchen towel.
- In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- In another bowl, beat the eggs, then add sugars, oil, and vanilla. Mix until smooth.
- Add the dry ingredients gradually to the wet mixture, stirring gently. Fold in grated zucchini and optional nuts or chocolate chips.
- Pour batter into a greased or parchment-lined loaf pan. Bake at 350°F (175°C) for 55-60 minutes until a toothpick inserted in the center comes out clean. Let cool in the pan for 10 minutes before transferring to a wire rack.
