  • 1 cup granulated sugar
  • ½ cup brown sugar

  • 3 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Wash zucchinis thoroughly and grate them using a box grater or food processor. Squeeze out excess moisture with a kitchen towel.
  2. In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. In another bowl, beat the eggs, then add sugars, oil, and vanilla. Mix until smooth.
  4. Add the dry ingredients gradually to the wet mixture, stirring gently. Fold in grated zucchini and optional nuts or chocolate chips.
  5. Pour batter into a greased or parchment-lined loaf pan. Bake at 350°F (175°C) for 55-60 minutes until a toothpick inserted in the center comes out clean. Let cool in the pan for 10 minutes before transferring to a wire rack.
