Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a bowl, whisk together flour, cocoa powder, baking powder, and salt.
- In a separate large bowl, cream together butter and sugar until light and fluffy.
- Add egg and vanilla extract; beat until combined.
- Gradually add dry ingredients to the wet mixture, mixing until just combined.
- Drop spoonfuls of dough onto prepared baking sheets, spacing about 2 inches apart.
- Bake for 10-12 minutes until cookies are set and slightly cracked on top.
- Allow cookies to cool completely before filling with ganache.
- Spoon or pipe ganache onto the flat side of one cookie and top with another to create sandwich-style cookies.
