Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until translucent.
- Stir in minced garlic and cook for another minute.
- Pour in broth and bring to a simmer.
- Add heavy cream and grated Parmesan, stirring until cheese melts and soup thickens.
- Season with fresh thyme, salt, and black pepper.
- Serve hot, garnished with additional Parmesan and herbs if desired.

- Use freshly grated Parmesan for the best flavor.
- You can substitute heavy cream with milk for a lighter version.
