- 1 can (13.5 oz) coconut milk
- 1/4 cup lime juice

Instructions
- Place chicken breasts in the crockpot.
- In a bowl, mix coconut milk, lime juice, honey, garlic, ginger, lime zest, salt, and pepper.
- Pour mixture over chicken.
- Cook on low for 6-7 hours or high for 3-4 hours until chicken is cooked through and tender.
- Shred chicken and serve garnished with cilantro and lime slices.

- You can add sliced bell peppers or pineapple for extra tropical flavor.
- Serve over rice or with steamed vegetables for a complete meal.
