  • Total Time: 1 hour 20 minutes
  • Yield: 1 loaf

Ingredients

Scale
  • 3 ripe bananas, mashed
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup brown sugar
  • 2 teaspoons ground cinnamon
  • Optional: chopped walnuts or chocolate chips for added texture

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large bowl, mash the ripe bananas thoroughly. Add the sugar, melted butter, eggs, and vanilla extract. Mix well until smooth.
  4. In a small bowl, combine the brown sugar and ground cinnamon. Set aside for layering.
  5. Gently fold the dry ingredients into the wet mixture until just combined to avoid overmixing.
  6. Pour half of the batter into the prepared loaf pan. Sprinkle half of the cinnamon sugar mixture over the batter.
  7. Add the remaining batter on top and sprinkle with the remaining cinnamon mixture. Use a knife or skewer to swirl the cinnamon into the batter, creating marbled effects.
  8. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

  • Optional: Fold in chopped walnuts or chocolate chips for added texture.
  • Ensure bananas are ripe for the best flavor and sweetness.
  • For a dairy-free version, substitute butter with coconut oil.
