Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Arrange sweet potato slices on the prepared sheet and brush with olive oil. Season with salt and pepper.
- Bake for 20-25 minutes until edges are crispy and golden.
- Remove from oven, top each round with crumbled feta.
- Drizzle honey over the feta-topped sweet potatoes.
- Garnish with fresh herbs if desired and serve warm or at room temperature.
Notes
- For a vegan version, substitute feta with plant-based cheese and honey with agave syrup.
- Adjust honey to taste for sweeter or less sweet flavor.
