- 1 lb (450g) chicken breast, diced
- 1 (9 oz) package tortellini (cheese or spinach)
- 3 tbsp unsalted butter
- 4 garlic cloves, minced
- 1 tsp red pepper flakes (adjust to taste)
- 1 cup chicken broth
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat a large skillet or pot over medium heat; add butter and melt.
- Add diced chicken, season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes.
- Add minced garlic and red pepper flakes; cook for another minute until fragrant.
- Pour in chicken broth and bring to a simmer.
- Add tortellini to the skillet; cook according to package instructions, usually 3-5 minutes, until tender.
- Stir in grated Parmesan cheese and cook until slightly thickened.
- Garnish with fresh parsley and serve hot.
Notes
- You can substitute chicken with shrimp or keep it vegetarian with hearty vegetables.
- Adjust spice levels by adding more or less red pepper flakes.
