- 2 tablespoons olive oil
- 4 boneless, skinless chicken breasts, sliced
- 2 tablespoons Cajun seasoning
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 8 ounces fettuccine or penne pasta
- 1 red bell pepper, sliced
- Salt and black pepper to taste
- Chopped parsley for garnish
Instructions
- Cook pasta according to package instructions until al dente. Drain and set aside.
- Heat olive oil in a large skillet over medium-high heat. Season chicken slices with Cajun seasoning.
- Add chicken to skillet and cook until browned and cooked through, about 5-7 minutes. Remove and set aside.
- In the same skillet, sauté garlic and red bell peppers until fragrant and tender.
- Pour in chicken broth and heavy cream, stirring to combine. Simmer for 3-5 minutes until slightly thickened.
- Add cooked pasta and chicken to the sauce, mixing well. Season with salt and pepper to taste.
- Serve hot, garnished with chopped parsley.
Notes
- You can adjust the spice level by increasing or decreasing Cajun seasoning. Add Parmesan cheese for extra richness.
