- 1 lb ground beef
- 1/2 cup bread crumbs
- 1 large egg
- 1/4 cup finely chopped onion
- 4 slices crispy bacon, chopped
- 1 cup shredded cheddar cheese
- 1/2 cup bourbon BBQ sauce, plus extra for serving
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large bowl, combine ground beef, bread crumbs, egg, chopped onion, salt, and black pepper. Mix well.
- Gently fold in chopped bacon and shredded cheddar cheese. Form mixture into 12 equal-sized meatballs.
- Heat a large skillet over medium heat, add oil if needed, and cook meatballs until browned and cooked through, about 8-10 minutes. Remove and set aside.
- Pour bourbon BBQ sauce into the skillet, stir to loosen browned bits, then return meatballs to simmer for 5 minutes.
- Slice sub rolls lengthwise. Spoon meatballs and sauce into each roll, top with extra cheese if desired, and broil for 2-3 minutes until cheese melts.
Notes
- Store leftovers in airtight containers for up to 3 days. Reheat in microwave or stovetop, and toast rolls before assembling for best texture.
