Instructions
- Preheat your oven to 350°F (175°C). Grease a loaf pan with butter or non-stick spray.
- In a large mixing bowl, mash the ripe bananas until smooth.
- In a separate small bowl, whisk together eggs, honey, melted butter, and vanilla extract until well combined.
- Pour the wet mixture into the mashed bananas and stir gently.
- In another bowl, whisk together flour, baking soda, and salt.
- Gradually add the dry ingredients into the wet mixture, mixing just until combined. Do not overmix.
- Pour the batter into the prepared loaf pan, smoothing the top. If desired, sprinkle chopped nuts or chocolate chips.
- Bake for 55-65 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
