- 1 lb (450g) boneless chicken breasts or beef strips
- 3 bell peppers (red, yellow, green), sliced
- 1 large onion, sliced
- 3 cloves garlic, minced
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- ½ tsp oregano
- ½ tsp black pepper
- 1 tsp salt
- 2 tbsp olive oil
- Juice of 1 lime
- Tortillas, for serving
Instructions
- Slice chicken or beef into strips. Mix chili powder, cumin, paprika, oregano, salt, and pepper in a small bowl. Rub spice mixture onto the meat evenly.
- Heat 1 tablespoon of olive oil in a skillet over medium heat, sauté the meat until lightly browned, then transfer to the slow cooker.
- Place sliced peppers and onions at the bottom of the slow cooker. Layer the cooked meat on top. Add minced garlic, lime juice, and a drizzle of olive oil.
- Cover and cook on low for 4-6 hours or high for 2-3 hours until meat is tender and vegetables are cooked to your liking.
- Give everything a gentle stir. Serve hot with warm tortillas or over rice. Garnish with cilantro, sour cream, or avocado as desired.
Notes
- For extra smoky flavor, add a teaspoon of chipotle powder.
- Sliced jalapeños or hot sauce can be added when serving for more heat.
- Adjust spice measurements to suit personal taste for mild or spicy fajitas.
