  • Yield: 4 servings

Ingredients

Scale
  • 1 lb (450g) boneless chicken breasts or beef strips
  • 3 bell peppers (red, yellow, green), sliced
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • ½ tsp oregano
  • ½ tsp black pepper
  • 1 tsp salt
  • 2 tbsp olive oil
  • Juice of 1 lime
  • Tortillas, for serving

Instructions

  1. Slice chicken or beef into strips. Mix chili powder, cumin, paprika, oregano, salt, and pepper in a small bowl. Rub spice mixture onto the meat evenly.
  2. Heat 1 tablespoon of olive oil in a skillet over medium heat, sauté the meat until lightly browned, then transfer to the slow cooker.
  3. Place sliced peppers and onions at the bottom of the slow cooker. Layer the cooked meat on top. Add minced garlic, lime juice, and a drizzle of olive oil.
  4. Cover and cook on low for 4-6 hours or high for 2-3 hours until meat is tender and vegetables are cooked to your liking.
  5. Give everything a gentle stir. Serve hot with warm tortillas or over rice. Garnish with cilantro, sour cream, or avocado as desired.

Notes

  • For extra smoky flavor, add a teaspoon of chipotle powder.
  • Sliced jalapeños or hot sauce can be added when serving for more heat.
  • Adjust spice measurements to suit personal taste for mild or spicy fajitas.
