Instructions
- Preheat oven to 375°F (190°C).
- Slice a pocket into each chicken breast, being careful not to cut all the way through.
- In a skillet, heat olive oil and sauté garlic and mushrooms until tender; season with salt and pepper.
- Stuff each chicken pocket with sautéed mushrooms and sprinkle with cheese.
- Secure with toothpicks if necessary, then place on a baking dish.
- Bake for 25-30 minutes or until chicken is cooked through and golden brown.
- Garnish with fresh parsley before serving.
