- 2 bay leaves
- 1 smoked sausage link, sliced
- 4 cups chicken broth
- 2 cups long-grain white rice
- Salt and black pepper to taste
- Chopped green onions for garnish
Instructions
- Soak the red beans overnight, then drain and rinse.
- In a large pot, sauté onions, bell pepper, celery, and garlic until softened.
- Add smoked sausage and cook for 5 minutes.
- Stir in spices, beans, and chicken broth.
- Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours until beans are tender.
- Meanwhile, cook rice according to package instructions.
- Season beans with salt and pepper to taste.
- Serve the beans over fluffy rice, garnished with chopped green onions.

- Soaking beans overnight reduces cooking time and enhances digestibility.
- Adjust cayenne pepper for desired spice level.
- For vegetarian version, omit sausage and add chopped vegetables or smoked paprika for smoky flavor.
