- 3 ripe bananas, mashed

For the crumb topping:
- 1/2 cup all-purpose flour
- 1/2 cup brown sugar
- 1/4 cup unsalted butter, cubed
- 1 teaspoon ground cinnamon
Instructions
- Preheat oven to 350°F (175°C). Grease a 9-inch springform pan or baking dish.
- In a large bowl, mash ripe bananas until smooth. Add sugar, eggs, and vanilla, mixing until combined. Stir in melted butter.
- In a separate bowl, whisk together flour, baking soda, and salt. Gradually add dry ingredients to wet mixture, mixing just until combined.
- Prepare the crumb topping by combining flour, brown sugar, and cinnamon. Cut in cold butter until coarse crumbs form.
- Pour banana batter into the prepared pan. Evenly sprinkle crumb topping over the batter.
- Bake for 45-50 minutes or until a toothpick inserted comes out clean. Cool slightly before serving.
Notes
- Store leftovers in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days.
- Reheat in oven or air fryer to keep topping crisp.
