Instructions

- Add the cold cubed butter to the dry ingredients. Use a pastry cutter or fingers to work the butter into the flour until mixture resembles coarse crumbs.
- Pour in the milk or buttermilk gradually, stirring gently just until the dough comes together. Do not overmix.
- Turn the dough onto a lightly floured surface and knead gently a few times. Pat into a 1-inch thick rectangle.
- Cut out biscuits using a biscuit cutter or glass. Place on a parchment-lined baking sheet.
- Brush the tops with melted butter if desired. Bake at 425°F (220°C) for 12-15 minutes until golden brown.
