Ingredients
Scale
- 2 large flour tortillas
- 1 cup cooked chicken, shredded or diced
- 4 slices of crispy bacon, chopped
- 1/2 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 2 tablespoons ranch dressing or ranch seasoning mix
- 1 tablespoon olive oil or butter
- Optional: chopped green onions, jalapeños, or tomatoes for added flavor
Instructions
- Gather all ingredients: cooked chicken, crispy bacon, shredded cheeses, and tortillas.
- Mix ranch seasoning with the cooked chicken or spread ranch dressing over the chicken to enhance flavor.
- Lay a tortilla flat on a clean surface, then evenly distribute the chicken, bacon, and cheeses over half of the tortilla. Fold it to form a half-moon shape.
- Heat a skillet over medium heat and add olive oil or butter. Carefully place the folded quesadilla in the skillet.
- Cook for 3-4 minutes on each side until golden brown and the cheese has melted, pressing down gently with a spatula for even crispiness.
- Remove from skillet, cut into wedges, and serve immediately. Garnish with optional toppings like chopped green onions and salsa.
Notes
- Use leftover or rotisserie chicken for quicker prep.
- For a gluten-free version, substitute with gluten-free tortillas.
- Experiment with toppings such as jalapeños or tomatoes for extra flavor.
- Ensure the skillet is not overcrowded to get a crispy exterior.
