- 1 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 4 cups chicken broth
- 1 cup orzo pasta
- 2 cups cooked chicken, shredded
- Zest and juice of 2 lemons
- Fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion and garlic, sauté until translucent.
- Add chicken broth and bring to a boil.
- Stir in orzo and cook until al dente, about 8 minutes.
- Reduce heat and add shredded chicken, lemon zest, and juice. Simmer for 5 minutes.
- Season with salt and pepper. Garnish with chopped parsley before serving.
Notes
- You can substitute cooked turkey for chicken for a different flavor.
- Use fresh lemon juice for the best flavor.
