- 2 1/2 cups all-purpose flour
- 1 teaspoon salt
- 1 cup unsalted butter, cold and cubed
- 1/4 to 1/2 cup ice water
- 5-6 large tart apples (such as Granny Smith)
- 3/4 cup granulated sugar
- 2 teaspoons ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon lemon juice
- 1 egg, beaten (for egg wash)
Instructions
- In a large bowl, combine flour and salt. Cut in the cold butter until mixture resembles coarse crumbs.
- Add ice water gradually, mixing until dough comes together. Divide into two discs, wrap in plastic wrap, and chill for at least 1 hour.
- Peel, core, and slice apples. Toss with lemon juice, sugar, cinnamon, and nutmeg. Set aside to macerate.
- Preheat oven to 425°F (220°C). Roll out one dough disc on a floured surface into a 12-inch circle. Fit into a 9-inch pie dish.
- Fill with apple mixture. Roll out second dough disc and place over filling. Trim and pinch edges to seal, cut slits for steam, and brush with egg wash.
- Bake for 45-50 minutes or until crust is golden brown. Let cool before serving.
Notes
- Use cold butter and ice water for flaky crust.
- Adjust sugar based on apple tartness.
- Allow pie to cool for best filling texture.
