  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup unsalted butter, cold and cubed
  • 1/4 to 1/2 cup ice water
  • 5-6 large tart apples (such as Granny Smith)
  • 3/4 cup granulated sugar
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1 egg, beaten (for egg wash)

Instructions

  1. In a large bowl, combine flour and salt. Cut in the cold butter until mixture resembles coarse crumbs.
  2. Add ice water gradually, mixing until dough comes together. Divide into two discs, wrap in plastic wrap, and chill for at least 1 hour.
  3. Peel, core, and slice apples. Toss with lemon juice, sugar, cinnamon, and nutmeg. Set aside to macerate.
  4. Preheat oven to 425°F (220°C). Roll out one dough disc on a floured surface into a 12-inch circle. Fit into a 9-inch pie dish.
  5. Fill with apple mixture. Roll out second dough disc and place over filling. Trim and pinch edges to seal, cut slits for steam, and brush with egg wash.
  6. Bake for 45-50 minutes or until crust is golden brown. Let cool before serving.
