- 1.5 pounds beef sirloin or tenderloin, cut into bite-sized pieces
- 4 cloves garlic, minced
- 3 tablespoons unsalted butter
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme or rosemary (optional)
- Fresh parsley, chopped for garnish
Instructions
- Heat olive oil in a skillet over medium-high heat. Brown the beef bites on all sides for about 5 minutes. Transfer to slow cooker.
- In the same skillet, melt butter and sauté minced garlic until fragrant, about 1 minute. Pour over the beef in the slow cooker.
- Add salt, pepper, and herbs. Cover and cook on low for 4-6 hours until beef is tender.
- Garnish with chopped parsley before serving. Serve hot with your favorite sides.
