- 2 lbs beef stew meat
- 4 large potatoes, peeled and sliced
- 1 cup shredded cheddar cheese
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 cup beef broth
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat. Brown the beef stew meat until seared on all sides.
- Layer sliced potatoes in the slow cooker. Top with cooked beef, chopped onion, and minced garlic.
- Pour beef broth over the ingredients. Cover and cook on low for 6-8 hours.
- In the last 30 minutes, sprinkle shredded cheddar cheese over the casserole and let it melt.

- You can add mushrooms or carrots for extra flavor and vegetables.
- Use sharp cheddar for a more intense cheese flavor.
