- 1 pound sausage (pork or chicken)
- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add sausage and cook until browned. Remove and set aside.
- In the same pot, sauté onions and garlic until translucent.
- Add diced potatoes and cook for 5 minutes, stirring occasionally.
- Pour in chicken broth, bring to a boil, then reduce heat and simmer until potatoes are tender (~15 minutes).
- Return sausage to the pot, stir in heavy cream, and cook for another 5 minutes.
- Season with salt and pepper. Garnish with fresh parsley before serving.
Notes
- Use spicy sausage for a kick or milder sausage for a family-friendly flavor.
- For a thicker soup, mash some potatoes directly in the pot or add a splash of cream.
