- 12 oz tortellini
- 1 lb ground beef
- 1 cup grated Parmesan cheese
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 4 cups beef broth
- 1 cup spinach, chopped
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F and form ground beef into meatballs.
- Bake meatballs for 15 minutes until cooked through.
- In a large pot, heat olive oil over medium heat and sauté onion and garlic until fragrant.
- Add diced tomatoes and beef broth, bring to a simmer.
- Gently add cooked meatballs and tortellini, cook for 7-10 minutes until pasta is tender.
- Stir in spinach, cook for another 2 minutes.
- Serve hot, garnished with Parmesan cheese.

- You can prepare meatballs ahead and freeze for quicker assembly.
- Adjust seasoning with herbs like basil or oregano for extra flavor.
