- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 large egg
- Salt and pepper to taste
- 4 cups beef or chicken broth
- 1 can diced tomatoes
- 1 cup spinach leaves
- 1 teaspoon Italian seasoning
- Fresh parsley for garnish
Instructions
- Preheat oven to 375°F. Mix ground beef, breadcrumbs, Parmesan, garlic, egg, salt, and pepper in a bowl.
- Form mixture into small meatballs and place on a baking sheet. Bake for 20 minutes until browned.
- In a large pot, bring broth to a simmer. Add diced tomatoes and Italian seasoning.
- Add baked meatballs to the broth and cook for 10 minutes.
- Stir in spinach and cook until wilted. Serve hot garnished with parsley.

- For extra flavor, add chopped onions or carrots to the broth.
- Use fresh herbs for a more vibrant taste.
