Instructions
- In a skillet, cook sausage until browned, then transfer to the crockpot.
- Add chopped onion and minced garlic to the crockpot.
- Pour in chicken broth and add diced tomatoes, stirring to combine.
- Cover and cook on low for 6-8 hours.
- In the last 30 minutes, add the cheese tortellini and chopped spinach.
- Season with salt and pepper, garnish with herbs, and serve hot.
