- 1.5 pounds beef stew meat, cut into chunks
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 3 carrots, sliced
- 3 potatoes, diced
- 1 cup green peas
- 4 cups beef broth
- 1 teaspoon smoked paprika
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add beef chunks and brown on all sides. Remove and set aside.
- In the same pot, sauté chopped onions and minced garlic until fragrant.
- Add browned beef back to the pot, then stir in smoked paprika, salt, and pepper.
- Pour in beef broth, bring to a simmer, then add carrots, potatoes, and peas.
- Simmer covered for 1.5 to 2 hours until the beef is tender and flavors meld. Serve hot.
Notes
- You can add corn or beans for extra texture. Adjust seasonings according to taste. Serve with crusty bread for a complete meal.
