- 1 lb ground beef or diced beef chunks
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 can (15 oz) diced tomatoes
- 4 cups beef broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley and green onions for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add beef and cook until browned. Remove and set aside.
- Sauté onions, garlic, carrots, and celery until tender.
- Add cooked beef back to the pot along with diced tomatoes and beef broth. Bring to a simmer.
- Reduce heat, stir in heavy cream, and cook until heated through.
- Top with shredded cheese, fresh herbs, and serve hot.
Notes
- For a thicker soup, mash some of the vegetables before serving.
- Replace beef with ground turkey for a lighter option.
