- 2 large sweet potatoes, peeled and diced
- 1 pound ground turkey
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 tablespoon olive oil
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 400°F (200°C). Line a baking dish with parchment paper.
- In a skillet, heat olive oil over medium heat. Add chopped onion and garlic, cook until fragrant.
- Add ground turkey to the skillet, cook until browned, then season with paprika, thyme, salt, and pepper.
- Meanwhile, toss diced sweet potatoes with a little olive oil, salt, and pepper. Spread on a baking sheet and roast for 20 minutes.
- Layer roasted sweet potatoes in the baking dish, top with cooked ground turkey mixture.
- Return to the oven and bake for an additional 15 minutes until heated through.
- Garnish with chopped parsley before serving.
Notes
- You can substitute ground chicken or beef for turkey.
- Add shredded cheese on top before the final bake for a cheesy crust.
