  • 1 tablespoon olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking dish with parchment paper.
  2. In a skillet, heat olive oil over medium heat. Add chopped onion and garlic, cook until fragrant.
  3. Add ground turkey to the skillet, cook until browned, then season with paprika, thyme, salt, and pepper.
  4. Meanwhile, toss diced sweet potatoes with a little olive oil, salt, and pepper. Spread on a baking sheet and roast for 20 minutes.
  5. Layer roasted sweet potatoes in the baking dish, top with cooked ground turkey mixture.
