- 1 lb ground turkey
- 2 large sweet potatoes, peeled and cubed
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp paprika
- 1/2 tsp cumin
- Salt and pepper to taste
- 1/2 cup shredded cheese (cheddar or mozzarella)
- Fresh parsley for garnish
Instructions
- Preheat oven to 400°F (200°C).
- In a large skillet, heat olive oil over medium heat. Add onion and garlic; cook until translucent.
- Add ground turkey, paprika, cumin, salt, and pepper; cook until browned and cooked through.
- Meanwhile, boil sweet potato cubes until tender, about 10 minutes. Drain.
- In a baking dish, layer sweet potatoes, then ground turkey mixture. Top with shredded cheese.
- Bake for 15-20 minutes until cheese is melted and bubbly.
- Garnish with fresh parsley before serving.

- You can add chopped spinach or bell peppers for extra veggies.
