Instructions
- Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
- Mash the ripe bananas in a large mixing bowl until smooth.
- In a separate bowl, whisk together the whole wheat flour, protein powder, baking soda, and cinnamon.
- In another bowl, whisk eggs, Greek yogurt, honey, vanilla extract, and mashed bananas until well combined.
- Gradually add the dry ingredients into the wet mixture, stirring gently until just combined. Fold in nuts or chocolate chips if desired.
- Pour the batter into the prepared loaf pan, smoothing the top.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Cool in the pan for 10 minutes before transferring to a wire rack.
