Ingredients
Scale
- 1.5 pounds boneless, skinless chicken breasts or thighs, cut into chunks
- 3 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon paprika
- Salt and freshly ground black pepper to taste
- Fresh parsley, chopped (for garnish)
- Skewers (wooden or metal)
Instructions
- Combine minced garlic, grated Parmesan, olive oil, oregano, basil, paprika, salt, and pepper in a large bowl. Toss the chicken chunks in this marinade, ensuring even coating. Cover and refrigerate for at least 30 minutes.
- If using wooden skewers, soak them in water for 20-30 minutes to prevent burning. Thread the marinated chicken onto skewers, spacing pieces evenly.
- Preheat your grill or grill pan to medium-high heat. Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and has a charred exterior.
- Garnish with chopped parsley. Serve hot with grilled vegetables, rice, or salad for a complete meal.
Notes
- Marinate the chicken for at least 30 minutes for richer flavor.
- Use metal skewers for durability, or soak wooden skewers beforehand.
- Maintain medium-high heat to achieve a proper sear without drying out the chicken.
- Add vegetables like bell peppers or onions to the skewers for extra flavor and color.
