- 2 large sweet potatoes, peeled and diced
- 3 tablespoons honey
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika (optional for extra flavor)
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions
- Start by peeling and dicing the sweet potatoes into uniform pieces. Slice the sausage into rounds and mince the garlic cloves. This preparation will make the cooking process seamless and quick.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced sausage and cook until browned and cooked through, about 5-7 minutes. Remove the sausage from the skillet and set aside.
- In the same skillet, add another tablespoon of olive oil if needed. Add the diced sweet potatoes, smoked paprika, salt, and pepper. Sauté for about 10 minutes, stirring occasionally, until they begin to soften and develop a nice golden crust.
- Stir in the minced garlic and cook for about 1 minute until fragrant. Then, pour in the honey and mix thoroughly, allowing the sweetness and garlic to coat the sweet potatoes evenly.
- Return the cooked sausage to the skillet, stir to combine all ingredients, and cook for an additional 3-5 minutes to meld the flavors. Garnish with freshly chopped parsley and serve hot.
