Instructions
- Preheat your oven to 350°F (175°C). In a large mixing bowl, mash the ripe bananas until smooth. Stir in honey or maple syrup and vanilla extract until well combined.
- In a separate bowl, combine rolled oats, cinnamon, and baking soda. Gradually add the dry mixture to the wet ingredients, mixing gently. Fold in chocolate chips, nuts, or dried fruit if desired.
- Line a baking dish with parchment paper or lightly grease it. Spread the mixture evenly, pressing down gently. Bake for 20-25 minutes until golden brown around the edges. Allow to cool before cutting into bars.
