- 4 large bell peppers
- 1 pound ground beef
- 1/2 cup cooked rice
- 1/2 cup diced tomatoes
- 1/2 cup shredded cheese (cheddar or Mexican blend)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tablespoon taco seasoning
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Preheat oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove seeds.
- In a skillet, cook ground beef with diced onion and garlic until browned.
- Stir in taco seasoning, cooked rice, diced tomatoes, salt, and pepper.
- Stuff each pepper with the beef mixture and place in a baking dish.
- Top with shredded cheese and bake for 25-30 minutes until peppers are tender and cheese is melted.
- Garnish with fresh cilantro before serving.

- Serve with salsa or sour cream for extra taste.
