- 1 lb boneless, skinless chicken breasts
- 1 cup long-grain rice
- 1 can black beans, drained and rinsed
- 1 cup diced tomatoes
- 1 cup shredded lettuce
- 1 ripe avocado, sliced
- 1 lime, cut into wedges
- 2 tbsp olive oil
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Cook rice according to package instructions and set aside.
- In a small bowl, mix chili powder, cumin, paprika, salt, and pepper.
- Rub chicken breasts with olive oil and spice mixture.
- Grill chicken until fully cooked and slice into strips.
- In a bowl, assemble rice, black beans, tomatoes, lettuce, and chicken slices.
- Top with avocado slices and garnish with cilantro.
- Squeeze lime juice over the bowl before serving.

- You can substitute grilled chicken with tofu or shrimp for variation.
- For added flavor, serve with salsa or sour cream.
