  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a standard loaf pan with butter or non-stick spray, or line with parchment paper.
  2. In a large bowl, mash the bananas until smooth. Add melted butter, eggs, cooled espresso, and vanilla. Whisk until well combined.
  3. In a separate bowl, sift together flour, cocoa powder, baking soda, salt, and sugars. Gradually stir dry ingredients into wet mixture until just combined—do not overmix.
  4. Fold in chocolate chips if using, for extra richness and texture.
  5. Pour the batter into the prepared loaf pan. Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean.
  6. Let the bread cool in the pan for about 10 minutes, then transfer to a wire rack. Cool completely before slicing.
