- 3 ripe bananas, mashed
- 2 cups all-purpose flour
- 3/4 cup cocoa powder
- 1 cup granulated sugar
- 1/2 cup packed brown sugar
- 1/2 cup unsalted butter, melted

- 1/4 cup strong brewed espresso, cooled
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a standard loaf pan with butter or non-stick spray, or line with parchment paper.
- In a large bowl, mash the bananas until smooth. Add melted butter, eggs, cooled espresso, and vanilla. Whisk until well combined.
- In a separate bowl, sift together flour, cocoa powder, baking soda, salt, and sugars. Gradually stir dry ingredients into wet mixture until just combined—do not overmix.
- Fold in chocolate chips if using, for extra richness and texture.
- Pour the batter into the prepared loaf pan. Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for about 10 minutes, then transfer to a wire rack. Cool completely before slicing.
Notes
- Use very ripe bananas for the best flavor and sweetness.
- Adjust the sugar or chocolate chips according to your taste preference.
- If you don’t have espresso, substitute with strong brewed coffee or instant coffee dissolved in hot water.
