- 4 tilapia fillets
- 2 red bell peppers
- 2 yellow bell peppers
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C). Roast the red and yellow peppers until charred, then peel and seed.
- In a blender, combine roasted peppers, garlic, olive oil, salt, and pepper. Blend until smooth to make the sauce.
- Season tilapia fillets with salt and pepper.
- Heat a skillet over medium heat with a tablespoon of olive oil. Cook the fish for 3-4 minutes on each side until golden and cooked through.
- Serve the tilapia with the roasted pepper sauce poured over the top, garnished with fresh parsley.
Notes
- For extra flavor, add a pinch of smoked paprika to the sauce.
- You can substitute other white fish fillets if desired.
