Instructions
- Cook the bacon until crispy in a skillet or using your preferred method. Drain on paper towels.
- Whisk eggs with a splash of milk, salt, and pepper until well combined.
- Pour the egg mixture into a non-stick skillet over medium heat. Gently scramble until just cooked through. Remove from heat.
- Lay a large flour tortilla flat on a plate. Spread scrambled eggs evenly across the center, add crispy bacon strips, and sprinkle with shredded cheese. Add hot sauce or salsa if desired.
- Fold the sides of the tortilla inward, then roll tightly from one end to the other to form a wrap. Optional: warm the wrap in a skillet or oven briefly to melt the cheese and crisp the tortilla further.
- Serve hot with a side of fruit or coffee, or store leftovers in an airtight container in the fridge and reheat.
