- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup canned corn
- 1 cup diced tomatoes
- 1 cup shredded cheddar cheese
- 1/2 cup cooked rice (optional)

- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
- Add chopped onion and garlic to the skillet. Cook until softened.
- Stir in corn, tomatoes, chili powder, salt, and pepper. Simmer for 5 minutes.
- Transfer the beef mixture to a greased baking dish.
- Sprinkle shredded cheese evenly over the top.
- Bake for 20-25 minutes until cheese is melted and bubbly.
- Optional: Garnish with fresh herbs before serving.
Notes
- You can add cooked rice for a more filling casserole.
- For extra flavor, top with sliced jalapeños or sour cream.
