Instructions
- Start by gathering all your ingredients. Ensure your cooked chicken is shredded or diced into bite-sized pieces.
- Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add chopped onion and cook until translucent, about 3-4 minutes. Stir in minced garlic and cook for 30 seconds until fragrant.
- Stir in cooked chicken and sprinkle with Italian seasoning, salt, and pepper. Cook for 2-3 minutes to allow flavors to meld.
- Meanwhile, cook the gnocchi in boiling water until they float, about 2-3 minutes. Drain and set aside.
- Reduce heat to low, pour in the heavy cream, and stir to warm and thicken for 2 minutes. Add grated Parmesan, mixing until melted and smooth.
- Add cooked gnocchi into the skillet, tossing gently to coat with the sauce. Garnish with chopped parsley and serve immediately.
