- 4 large russet potatoes, sliced thin
- 1 pound smoked sausage, sliced into rounds
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 packet ranch seasoning mix (or homemade ranch seasoning)
- 1/2 cup sour cream
- 1/4 cup milk
- 2 tablespoons olive oil
- Salt and pepper to taste

Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat 1 tablespoon of olive oil over medium heat and sauté the sliced smoked sausage until browned. Remove and set aside.
- In a large bowl, combine sliced potatoes, ranch seasoning, sour cream, milk, salt, and pepper, tossing to coat the potatoes.
- Spread the potato mixture in a greased baking dish and top with cooked sausage and both types of cheese.
- Bake for 35-40 minutes, or until cheese is bubbly and golden brown. Broil for an additional 2-3 minutes for a crispy top if desired.
- Let rest for 5 minutes, garnish with parsley if desired, and serve hot.
